This partnership brings a winery with a strong and distinctive personality into the EFI Fine Wines project, combining deep territorial roots with a culture of research and a constant drive to explore new possibilities.<\/p><p>Z\u00fdm\u0113 was born from a clear ambition: to create wines that are bold, distinctive and unmistakable, expressing the richness of their origins while moving beyond established conventions. The first chapter of this journey began in 1999 with Harlequin, a wine that embodied a vision determined from the outset to take a different path.<\/p><p>At the heart of Z\u00fdm\u0113 is Celestino Gaspari, winemaker and founder, whose professional identity has been shaped by an in-depth knowledge of Valpolicella and a continuous search for new forms of expression. His approach is rooted in respect for nature and in the belief that wine emerges from the balance of five essential elements: mankind, vines, soil, water and sun.<\/p><p>This philosophy is reflected in the winery itself, housed in an ancient sandstone quarry and conceived as a place where architecture, nature and wine culture come together. The space embodies the same principles that guide the wines: enhancing what the land has to offer while allowing human knowledge, sensitivity and craftsmanship to play their part.<\/p><p>The name Z\u00fdm\u0113 comes from the Greek word for \u201cyeast\u201d, evoking fermentation and the idea of continuous transformation. It captures a dynamic approach to viticulture and winemaking, in which identity, balance and individuality remain essential.<\/p><p>Welcoming Z\u00fdm\u0113 to the EFI Fine Wines portfolio reinforces the commitment to representing Italian producers distinguished by vision, authenticity and character.
